Baked Eggs in Muffin Tin

This recipe is soooo great for our family of 6! 
Not only does it save time...you can personalize them anyway you want in less than 15 minutes!

Ingredients:
Muffin tin
12 eggs
salt
pepper
*optional - peppers, spinach, parmesan cheese, bacon, canadian bacon, cheese, etc.

Directions: 
(1) Preheat oven to 350'. Spray muffin tin with cooking spray. Crack an egg into each muffin slot.

(2) Personalize you eggs. I added 2 spinach and parmesan scrambled, 4 whole eggs, 4 cheese scrambled, and 2 with red, yellow, and orange peppers. I added salt and pepper to all. 

(3) Bake at 350' in the oven for 10 - 15 minutes. (Mine took 12 minutes.) Let cool 2 minutes.

(4) Remove egg with a spoon by going around the tin in a circle to unstick it, then scoop in out.

  1. This is a great way to do eggs for a big bunch. Perfect eggs every time. 11 minutes exactly in my toaster oven. 2 muffin tins at a time = 24 eggs all done at the same time if feeding a crowd.
