Crab Cakes Recipe

Our family recently bought crab and salmon when it was on sale at our local market. 
The next day we had a few servings left of each, so I decided to make Crab Cakes out of them, although really it was Crab/Salmon Cakes. And they were sooooo gooooood!
You can use either Crab or Salmon or mix them like I did!

INGREDIENTS:
about a pound of crab meat/salmon (I like to use left overs!)
1/2 cup Ritz Crackers, crushed
2 large or 4 small green onions chopped, the whole onion
1/2 cup green pepper, finely chopped
1/4 cup mayonnaise
1 egg
1tsp. Johnnys Seasoning
1 tsp. mustard
2 tbls. lemon juice
1/4 tsp. garlic powder

flour
1/2 cup oil

DIRECTIONS:

Combine all the ingredients together in a large bowl (except flour and oil). Make sure when using crab meat from the crab to not get any shells, and if using salmon avoid bones!

Mix well until combined.

Get a large dinner plate and dust with flour. Form with your hands about 6 inch cakes and place onto floured dinner plate. Sprinkle flour over the top of the cakes. (About 3 at a time)

Heat oil over medium heat and add 3 crab cakes at a time. Heat about 3-4 minutes on each side.

Drain on paper towels.

I served mine with rice and veggies:)
Makes about 8 cakes.
