Crab Puffs

This was the first time I have ever tried something like this, and it turned out GREAT! It was a hit for the whole family! It is quite simple to make. These make great appetizers for a football party, birthday, or just a treat! If you have a bit of left over filling you can use as a dip!
(If doubling, 1 1/2 the filling (not double), had a bit left over, unless want to use for dip)

Ingredients:
1 sheet puff pastry dough, thawed (found in frozen isles, takes 40 minutes to thaw)
4 ounce cream cheese, softened
2 tablespoons mayo
12 ounces crab meat (fresh or fake)
2 green onions, chopped
2 teaspoons fresh lemon juice
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper 

1-egg (for egg wash)

Directions:

(1)  Preheat oven to 400'

(2) Cut pastry dough into 16 squares 

(3) In a large bowl, combine cream cheese, mayo, green onions, lemon juice, garlic powder, salt, and pepper. Fold in crab meat.

(4) Add a spoonful of filling DIAGONALLY into center of puff pastry square.

(5) fold opposite corners together and tuck under sealing TIGHTLY (it looks like a hot dog roll up only folded and not rolled)

(6) Beat 1 egg in a small bowl, brush over the tops of puffs.              



Bake on a piece of parchment paper for easy clean up, or use foil and spray with cooking spray at 400' for 12-15 minutes or until golden brown. 
(I doubled the recipe and it took 20 minutes)

Crab and Corn Chowder Recipe

This recipe is a combination of a few recipes that I put together...and I am so glad I did! This was sooooo good!
Our family LOVES to go crabbing in the summer time so I am always looking for recipes to use crab.
 I used fresh crab for this recipe, but you can always use fake crab...or use clams instead of crab...or take out the corn....you can tweak it to your liking:)
(I doubled this recipe for our family and friends...use an extra large pot if going to do so!)

Ingredients:
1/3 cup diced celery
3 1/2 cups peeled, diced potatoes 1/2"cubes
1/3 cup onion
3/4 cup crab meat (about 12 ounces)
1 cup corn (I used canned, can use frozen, or from cob)
3 1/4 cups water
2 tablespoons chicken bouillon (or 6 cubes, use 9 if doubling)
1/2 tsp. salt
1 tsp. black pepper
1 tsp. thyme
1 tsp. sage

5 tbls, butter
5 tbls. flour
2 cups milk

Directions:

If you are using fresh crab meat, crack all the crab ahead of time...get your family to help! It took me alone 2 hours and 40 minutes for 7 crab (3 Dungeness Crab and 4 Rock Crab. i am not a fan of Rock Crab, but the meat is GREAT in this soup!). 



(1) First, in a large pot add potatoes, celery, onion, corn (if frozen), sage, thyme, and water to pot. Bring to a boil, reduce heat to medium, cook 10-15 minutes until potatoes are tender.

(2) Add bouillon cubes, crab, salt and pepper (corn if fresh), And stir.

(3) (PICTURE NOT SHOWN) In a separate sauce pan, melt butter over medium heat, whisk in flour until thick. Slowly add milk stirring continuously to avoid lumps for 3-5 minutes until hot.

(4) Add milk mixture to large pot. Bring back to boil, and turn off heat.


Can serve in a bowl and add crackers or serve in a bread bowl.

Target Easter Clearance!

If you haven't headed to Target yet...do so! Easter items are on clearance! Food is 50% off and non food items are 70% off! I went to the Issaquah Target store this morning and found lots of great deals! The signs were wrong so make sure you scan items!

This picture is all Easter related stuff. Easter wreath $5.99 regular $19.99, Window decorations were $3.60 for 6 regular $12! Towels $1.49 regular $4.99. Plates $1.04, regular $3.49. Foam Eggs $1.50 regular $5.Tape $1.50 regular $5. Bunny cup $1.19 regular $3.99. Table cloths $1.49 regular $4.99! Spritz bunny decorations $1.5 regular $5!


All these items can be used for other things than just Easter decorations. The table cloth was $3.89 regular $12.99, it is a spring decoration! The cup is Spring colors $1.19 regular 3.99. The Hello Kitty lip gloss and nail art was $1.49/regular $4.99. The lamb was $2.99 regular $9.99. The Spritz critters are cute spring animals $1.50/e regular $5! The tissue paper is pink and red and yellow and blue $0.45 regular $1,80. The deviled egg holder is pink and was only $1.50 regular $5! The doll was $1.49 regular $4.99 and the booties were clearanced to $1.98. The 2 pack of muffin tins were $2.99/e! regular $9.99! (I bought one for my mom:)

Teenage Mutant Ninja Turtle Birthday Party Ideas

This was a fun Birthday. My sons birthday is in January, so before Christmas I always know what theme the party will be so I can shop for ideas during the Christmas clearance...for me I try to use red and green, but depending when your child's birthday is, you can use the colors from the previous holiday and find ideas on clearance!

THE FOOD

NINJA TURTLE APPLES
 Purchase enough green apples for your guests. Buy Fruit By the Foot in either red, orange, purple, or blue (or a mixture of all). I bought mine at Target and there was only red. You may have to go to a few stores to find different colors or order online. I also bought the candy eyes at Target, located  in the cake decoration section. (I also used the same eyes for the cupcakes). The mouth is black gel frosting (that I had bought clearance after Halloween:)

Wash and dry the apples, remove any stickers. Wrap the fruit roll up around the top of the apple and

Bacon and Egg Muffin Cups


I have finally figured out how to make these perfectly for less grease and crispier bacon. I have tried different methods such as cooking the bacon in the microwave or oven for a few minutes then lining the tins, but this method is truly the best! 
When cooked, they are EASY to put into a zip lock bag to freeze or put into the fridge for reheating later. You can personalize each tin with different ingredients such as green pepper, cheese, spinach, mushroom, etc. for the different tastes of your family. Enjoy!

INGREDIENTS: ( 1 muffin tin makes 12, double if making 2 tins)
12 pieces of bacon
12 eggs
(optional: cheese, green pepper, onion, mushroom, spinach, jalapenos, etc)

DIRECTIONS: 

1.) Preheat the oven to 375'. Line each tin with bacon pressing along the rims of each hole. (They will overlap but the bacon shrinks so keep it overlapped). Bake for 10 minutes then remove from oven. Take the bacon out of the tin and lay flat on a plate and dab with paper towels. Pour out grease from tins into the sink. (notice the grease? This is why I do it this way...yuck!)

2.) Reline the tins with the bacon in the opposite direction (it stays better this way). And crack an egg into each tin. (It doesnt look as pretty this way, but better than soggy bacon and grease!)

3.)With a fork, poke the yolk twice making an X shape. Add your toppings to each tin and stir gently with fork. If using cheese, top with cheese. (Note you can also just cook an egg without the bacon as seen in the bottom left corner. If you do not want to use the bacon, start with this step).

4.) Cook at 375' for 20 minutes.With a fork gently go around the tin to pop out the bacon and egg muffin. Enjoy!
