So I have tried a few chicken curry recipes in the crock-pot and they seemed to lack something.
I tweaked a few and came up with my own...and surprisingly it worked!

INGREDIENTS:
Ingredients:
4 boneless, skinless, chicken breasts
3 potatoes, peeled, cut into 1-inch cubes
1/2 onion, cut into chunks
2 peppers (red, yellow, or orange cut into chunks)
2 cans coconut milk
1 tbls. curry powder
1 chicken boullion cube
1 tbls. hot sauce
garlic powder
pepper
salt
DIRECTIONS:
1. Cut potatoes into 1-inch cubes and place in crock pot. Sprinkle salt, pepper, and garlic powder over top.
2. Add onion and peppers into crockpot on top of potatoes. (If using big peppers, cut into chunks, if using mini peppers, cut into rings.)
3. Sprinkle salt, pepper, and garlic powder over both sides of chicken breasts. Add on top of potatoes, onions, and peppers in crockpot. Poke holes into the chicken breasts to get the flavor inside!
4. Mix 2 cans of coconut milk, chicken bouillon (crushed), hot sauce, and curry powder in a large bowl. Pour into crockpot over chicken.
5. Cook on low for 8 hours. Serve with rice.
When finished, you can shred the chicken in the crock-pot if desired...easier to serve over rice!
