This is one of my favorite breakfasts, and it is healthy!
You can also buy Steel Cut Oats for cheap, especially if you find it in bulk!

I buy mine in bulk at Winco, and they have it as low as $0.68/lb!

There is 2 REALLY good ways to make steel cut oats...but it depends how much you want to make, and how much time!

If you want to make a few servings, or have some time in the morning, I recommend this recipe:

TOASTED STEEL OATS

Ingredients:
1 cup steel cut oats
3 cups BOILING water
1 tablespoon butter
1 cup milk

Toppings:
Milk and/or brown sugar or raisins and cinnamon

Directions:
(1) Melt the butter in a medium pot on medium high heat, add the oats and cook about 2 minutes (MAKE SURE YOU DO NOT OVER TOAST THE OATS OR THEY WILL BURN!)
(2) Add the boiling water, bring to a boil and simmer on medium low heat for 20 minutes (Do not stir with in the 20 minutes)
(3) Add the milk and stir, bring back to a boil, then simmer on medium low for 10 minutes, stirring often.
(4) Add the cooked oats to your bowl. You can add what ever toppings you want, and enjoy!

Serves 4, and is just over 100 calories (before toppings)

If you want to cook for a lot of people, you can double the recipe below and cook it OVERNIGHT! There are also some options for this recipe such as almond milk or coconut water! You can also just follow the recipe below to serve your family:)

CROCKPOT OATMEAL

Ingredients:
1 cup steel cut oats (or oats that take longer than 5 minutes to cook!)
*3 1/2 cups water (see below)
*1 cup non fat milk  (see below)
1/4 cup brown sugar
1  Tbls. butter
1/2  tsp. vanilla extract
1/4 tsp. salt
1 tsp. cinnamon
1 cup diced apple or raisins (optional)

Directions:
Mix all ingredients in a greased  crockpot and cook on LOW overnight  for 8 hours!

*substitutions - instead of  3 1/2 cups water, use coconut water (46 calories per cup)
instead of 1 non fat cup milk (86 calories), use 1 cup almond milk (40 calories)
