Extremely EASY Breakfast Fried Rice Recipe!
Ingredients:
Left over white rice (2-4 cups)
hot dogs (2-4), cut up
2 eggs
2 tbls. Oil
(optional – 2 green onions cut up, and/or frozen peas (thawed)
pepper
Directions: (as if using peas and green onions, which I normally use)
(1) Heat oil in large sauce pan
(2) mix 2 eggs in a small bowl, add to hot oil, after 2 minutes flip, cook 1 minute longer, and remove to cutting board.
(3) slice hot dogs lengthwise into 4’s, then chop, add hot dogs and chopped green onions to already heated sauce pan, cook 5-7 minutes. The hot dogs will produce oil and salt.
(4) Add rice to hotdog and onion mixture. Break rice apart and keep stirring until heated through to avoid sticking or burning. Cook about 7-8 minutes. Stir in peas, cook 2 minutes more.
(5) Chop up egg with knife into small pieces and add to mixture, stir. Enjoy!
